They are the three tire choices I have for the stock 205/55-15 BBS on the E30 M3. Range from $324-384 for a set.

ZIIs is what I got for the Fiesta. They're the best in the category from what I found on the internet.

205/55-15 is a silly size, even though it is the tire rack recommendation. Run 205/50-15, and your options get much much better, including Dunlop Direzza ZII Star Spec (my favorite) and BFG G-Force Rivals (almost as good as the ZIIs, but cooler looking tread).
Also, Spec Miata and SE30 Hoosier take-offs will fit your car. Just sayin.

I have the Ecsta SPTs on my summer wheels for my SVT Focus. Great tires. Haven't had any issues. They work great for me in the wet as well, though the SVT doesn't exactly have huge piles of torque so YMMV.

^^Assumes your rims are 15x7 or 15x8. 205/50/15 works well with both.

E30 M3, nice! Very jealous.
I have a set of S.Drives on my E30 (325i) and love them. I got them as my summer tire for general use and occasional auto-X and track days. No complaints at all - great tread wear, excellent traction, quiet. Also love that the tire has a nice lip that's protected my rims really well. Liked them so much that I got a set for my Subaru too, I'm sold on this tire.
Can't say much about the other two as i haven't used them on the E30. I'm pretty sure I had some Direzzas a while back when I had my S2000 and all I remember is that they wore down surprisingly fast.

I'm a big fan of the Direzza ZIIs. They don't like standing water all that much, but they're great up until that point.

I have Ecstas. They aren't bad.
Can't compare to anything else though. It's the only decent tire I've had on my car and while I've driven on other tires they've been on different cars. Direzza's and Hankook Ventuses seem pretty popular for autocross locally, not that that actually tells you anything

I see Hankook Ventus RS3s more often here. Someone runs those on a Focus ST. I'm thinking of upgrading next year

More detail on the tires themselves:
ZII is cheap, and the star spec version is new, and I have blown through several sets racing my E30. They are incredibly consistent - Very good grip, minimal heat sensitivity (make nearly as much grip cold as they do hot, and don't really loose grip when they get greasy), and long lasting (I get about 15 hours of track time out of them, depending on the track)
Rival is a little more expensive, but has a wider shoulder which helps protect the wheel (not that the shoulder and rim protector on the ZII are inadequate). It also looks cooler, and has higher peak grip when warm. However, the Rival is heat sensitive, and is a bet sketchy when cold. They also fall off pretty badly when you overheat them. And the really cool looking tread pattern doesn't work so well in the rain.
I haven't tried any of the other tires in that size (except slicks), as they don't really compete with the ZIIs and Rivals on grip.

Get the Direzza DZ101 or Michelin A/S3's if possible. I haven't driven on Yokos, but the Yokohamas on my wife's Forester are terrible and the Kumho Ecsta ASs that I had were awful once it got chilly out

I had a set of Ecstas on my 525i, but like others have said, I had nothing to compare them to. Never gave me any trouble and seemed sufficiently sticky, although it's somewhat tough to unstick a 3400lb/168HP car when running 235s/265s.
The one thing that really impressed me was the treadwear rating. It seemed quite high in comparison to most other tires that size. I guess it all depends on your priorities.
